“SOUBOU-SHU “(Sake brewing in the temple)

Nara, where I live, was once the capital.
About for 100 years, from the beginning of the 8th century  to 16th century, Nara was a center of Japan.
Even after the capital moved to neighboring Kyoto.
The transmission of religion and culture was mainly from temples.

Belgian and German monasteries have traces of beer and wine brewing around the 15th and 6th centuries.
That fact surprised me.
In fact, at the same time, sake was made in temples in Japan and was called SOUBOU-SHU.

“KTNDAI-KI” that is written in 15th centuries recorded that “SOUBOUSHU” was an excellent sake.
The temple has become the center of the brewing industry.
That is why
 temples had rice, the raw material for sake, a wealth of scholarship and ta labor force 0f many monks.

“Tokugawa Jikki” written around the 18th century mentioned about SAKE of NARA.
It continued until that time.

Because of reason that  this monk liquor is excellent liquor means, a remarkable technological innovation in the history of liquor.
